Drink cow's milk?

Calcium is a major mineral essential for healthy bones and teeth. There are several minerals known to be essential to the human body and which must be obtained from food. The major minerals (calcium, magnesium, phosphorus, sodium, chloride and potassium) are needed in the greatest quantities or are present in large amounts in the body. The three main functions of minerals are as constituents of the skeleton, as soluble salts which help control the composition of the body fluids, and as essential adjuncts to the action of many enzymes and other proteins.
The 1989 US recommendations are generally slightly higher. In 1994 the US recommendations for children aged 1-10 was increased from 800mg to 1,200mg daily and for young adults aged 11-24 years it was increased from 1,200 to 1,500mg. During pregnancy and breast feeding women in the USA are now advised to have 1,400mg calcium daily and American men and women over the age of 50 years are advised to increased their calcium intake towards 1,500mg because the intestinal absorption of calcium declines with age.
Vegan Sources of Calcium

Good plant sources of calcium include tofu (if prepared using calcium sulphate contains more than four times the calcium of whole cow’s milk), green leafy vegetables, seeds and nuts. The calcium in green vegetables which are not high in oxalate e.g. kale, is absorbed as well or better than the calcium from cow’s milk. Some soya milks e.g. Provamel, Plamil, Granovita are fortified with calcium. Drinking hard water can provide 200mg of calcium daily but soft water contains almost none. Other calcium rich foods include black molasses, edible seaweeds, watercress, parsley and dried figs.

What are good sources of calcium?

When people hear the word calcium the first thing that comes to mind is milk. Dairy products are definitely a great source of calcium. However, there are also other places to find calcium that may not be so obvious, such as broccoli. Here is a list of some not-so-obvious foods that are good sources of calcium:

Dandelion Greens
Kale/Collard Greens
Spinach
Beans
Black-eyed Peas
Molasses
Almonds
Sesame Seeds
Chinese Cabbage
Oranges
Fortified Foods (OJ, Soy Milk, Margarine, etc)

Your diet is not the only source of calcium for the body. If you do not consume enough calcium in your diet, then your body will remove calcium from bones! This can lead to health problems.Protein & Calcium

A high protein diet, especially derived from animal foods, causes calcium loss in the body. The higher sulphur-to-calcium ratio of meat increases calcium excretion, and a diet rich in meat can cause bone demineralisation. A report published in 1988 [1] comparing the amounts of calcium excreted in the urine of 15 subjects showed that the animal-protein diet caused greater loss of bone calcium in the urine (150mg/day) than the all-vegetable protein diet (103mg/day). These findings suggest that diets providing vegetable rather than animal protein may actually protect against bone loss and hence osteoporosis. In one study adults on a low-protein diet were in calcium balance regardless of whether calcium intake was 500mg, 800mg or 1400mg a day. [2] Interestingly The American Dietetic Association, in its 1993 policy statement on vegetable diets, pointed out that the calcium intakes recommended in the USA were increased specifically to offset calcium losses caused by the typically high protein consumption in that country.
Calcium Absorption

Only 20-30% of calcium in the average diet is absorbed. Calcium absorption can be reduced because it binds to fibre, phytate or oxalate in the intestine. Vegan diets contain more than average of these substances. Fibre is no longer thought to limit the availability of calcium from food. Phytate or phytic acid is found in grains, nuts and seeds and can bind with calcium making it less absorbable. However, the body does adapt to lower levels of available calcium and the American Dietetic Association and the UK’s Ministry of Agriculture, Fisheries & Foods as well as the Department of Health believe that fibre, phytate and oxalate do not have a significant effect on calcium intake overall.

Although the calcium intake of adult vegans tends to be lower than the recommended optimum, it is close to the Estimated Average Requirement. There have been no reports of calcium deficiency in adult vegans.

The Estimated Average Requirement of a nutrient in the diet is an estimate of the average needs of a group of people. About half may need more, and half may need less.
Osteoporosis

Osteoporosis is the major cause of bone fractures in the elderly. One in four British women are affected by this disease. It is better prevented than treated and prevention includes an adequate intake of calcium throughout life, but especially in childhood and young adulthood; and minimising major risk factors e.g. smoking, heavy alcohol use and lack of physical exercise. Diets high in protein and in salt (sodium chloride) also increase calcium loss from the body and may have an effect on osteoporosis. Post-menopausal women are more prone to osteoporosis because they produce less oestrogen, which protects the skeleton in younger women.

There has been much publicity about the role of dietary calcium in preventing osteoporosis but the fact remains that it is more common in Westernised countries where calcium intakes and consumption of dairy products are high compared to the rest of the world. Osteoporosis is comparatively rare in rural subsistence cultures, even though calcium intakes are much lower. Lifestyle factors, such as physical activity, lower protein intakes, little alcohol consumption and the rarity of smoking, may offer protection to people in these populations.

Reasons to go Vegan from Vegetarian

Its easy to be vegan :D

Here are some reasons to go vegan:
# Cows were fed on the ground up remains of other cows & sheep - the result is thought to be BSE (mad cow disease) in the USA cattle are fed partly on recycled plastic pellets
# Cows only give milk for 10 months after they have a calf - so they are routinely artificially inseminated (ie. mechanically raped) to keep them pregnant & milking - their calves are taken away (usually at 12 hours old) for meat or export to veal crates
# Cows would naturally live up to 20 years but are slaughtered after 5-7 years when their milk production begins to fall
# Veal calves are confined in stalls in the dark, unable to move & are fed on pigs blood , chocolate & dried milk (we are drinking the rich fresh milk of their mothers)
# Male dairy calves are killed at a young age for veal. BGH. Bovine Growth Hormone causes grotesque enlargement of the udders so they may drag on the ground where the cows step on them as they walk.
# Cows naturally produce 5 liters of milk per day for their calves - under the intensified systems of modern farming they produce 25-40 liters per day - resulting in swollen & inflamed udders - at this rate they are soon worn out
# Dairy cows and egg hens end up at the slaughterhouse, too.
# Dairy products made with stomachs don’t belong in yours. Cheese is curdled using rennet, aka sheep’s stomach.
# Large areas of land are under monoculture to grow crops to feed to animals - these areas are wildlife deserts supporting fewer & fewer species.
# Osteoporosis due to calcium loss from bones is mainly due to the sulphur content casein protein in milk that cause calcium to be lost in the urine - the countries with the highest dairy consumption are those with the highest levels of brittle bones
# 50% of people do not have the enzyme to digest milk properly & milk allergy is related to asthma & eczema
# Egg yolk is a dense concentration of saturated fat & the white is high in albumin protein associated with leaching calcium into your urine. Butter is 80% saturated fat, cream is 40% saturated fat & cheese is 25-40% saturated fat
# If they continue to clear forests to raise cattle at the present rate, in 50 years there will be none left
# 80% of cultivated land is used to grow food for animals
# Pressure on land due to animal farming leads to soil erosion
# An inch of topsoil takes 200-1000 years to develop
# Land will be lost due to rises in sea level due to global warming due to animal farming
# The destruction of the rainforest by cattle farmers is destroying the lungs of the planet & reducing the worlds capacity to replenish our oxygen supply
# The 1,300,000,000 cattle in the world emit 60,000,000 tons of methane per year (methane is a greenhouse gas & leads to global warming)
# Fertilizer used to grow crops to feed to animals releases nitrous oxide - thought to account for 6% of the greenhouse effect
# Fertilizer, weedkiller & pesticides sprayed on crops enter the atmosphere creating a noxious carcinogenic cocktail
# Ammonia from animal urine also pollutes the atmosphere
# Emissions from large chemical plants which produce fertilizer, weedkiller & other agricultural chemicals are also poisoning our air
# Nitrates & pesticides used on crops grown to feed livestock end up in our rivers
# Between 1950 & 1985 grain production in Europe & the USA increased massively but 2/3 was fed to animals
# 70% of all grain is fed to animals
# Chickens are crammed into battery cages with upto 3 other birds, they are unable to even spread their wings & many can not even stand up
# Unwanted male chicks (because they can’t lay eggs) are gassed or pulped while their sisters go to the battery sheds
# Chicks are debeaked without anaesthetic to prevent them injuring each other in the unnaturally confined conditions they are kept in - this is equivalent to having your fingernails pulled out without anaesthetic
# Modern farming methods using growth hormones & artificial lighting mean that many chickens out grow their bones, resulting in fractured & broken legs
# 95% of poultry suffer injuries before being killed & 30% suffer broken bones
# Vegetarians have 24% reduced risk of getting heart disease & Vegans a 57% reduction (heart disease is the biggest killer in the North America accounting for 50% of deaths)
# Vegans on average live 6 years longer than non-vegans.
# The average vegan total cholesterol level is 128. The lowest level for a heart attack is 150.
# Milk consumption has been linked to colic, ear infections, asthma, and a whole slew of other diseases.
# Milk is known to cause acne breakouts
# Cholesterol can cause impotence
# Vegans don’t consume any cholesterol
# Humans are the only animals that drink milk beyond infancy
# Vegan is easier to spell than vegetarian :)

Sultan Hindou Salut!

Ça fait un bail que je n’ai rien ajouté sur le blog, trop occupé, avec un 2e bébé en cours et plein de nouveaux projets, mais je compte m’y donner plus souvent car j’ai eu de très bons résultats! A date j’ai convaincu 3 personnes d’adopter un régime végétalien! Et au moins une dizaine au végétarisme :D Sans compter tout ceux et celles qui ont diminué leur consommation de produits animaliers.

Je compte donc ajouter plusieurs articles aussi dégoûtants qu’inspirants comme d’habitude ainsi plusieurs recettes VG, voir RAW (cru) car souvent on me dit: “mais tu manges quoi?” hehe :)

Rappel: Selon le ministère indien de l’Agriculture, un hectare de terre arable permet en effet de produire 20 tonnes de pommes de terre, contre seulement 50 kg de viande!!!

BBQ equals CANCER

To grill or not to grill? 81% of Americans own a barbecue

Three out of four American households own a barbecue grill, according to the Health, Patio, & Barbecue Association. Yet many consumers are unaware that grilling some popular food items can produce cancer-causing compounds called heterocyclic amines (HCAs). Which foods contain the highest concentrations of HCAs? To answer that question, nutrition professionals with The Cancer Project determined the level of HCAs found in commonly grilled foods.

Background
HCAs, a family of mutagenic and cancer-causing compounds, are produced during the cooking of many animal products, including chicken, beef, pork, and fish. In January of 2005, the federal government officially added HCAs to its list of known carcinogens.1

Findings
Cancer Project nutritionists determined that many commonly grilled foods contain alarmingly high levels of HCAs. This table lists the five foods containing the highest levels.

Le syndrome d’effondrement des colonies (CCD) se caractérise par le fait que les ouvrières ne retournent pas dans la ruche. Un phénomène inexpliqué qui pourrait avoir des origines multiples.
LE SYNDROME d’effondrement des colonies d’abeilles, ou CCD (Colony Collapse Disorder), est apparu aux États-Unis à la fin 2006. Selon l’USDA, le département de l’Agriculture, il aurait déjà causé la disparition de la moitié des ruches dans le pays.
